    Food recipe

    I am getting sick of the same old chicken. I need some ideas for healthy dinners. What's good, that's good for ya and is low in sodium (my wife can't have too much sodium in her meals)? Recipes would be much appreciated. Thanks.

    We eat lots of different thing that are low fat and sodium. My wife likes to make Tostadas with lean ground beef, fat free pinto beans, and lots of veggies on top.
    She also buys the Starkist Tuna fillets, which are low fat and very high in protein. They're a bit dry for me so I break them up on a salad with a side of Newman's Own Light Balsamic Vinaigrette.

    For some quick meals we eat turkey burgers on multi-grain buns (or without the buns).

    Mainly, we stick to fresh veggies and lean cuts of meat. Nothing processed, because they add salt for taste.

    For breakfast I stick mainly with Oatmeal.

    I also eat about 5 times/day. The idea is never to allow yourself to get hungry, that way you'll never over-eat. My in-between-meals are protein shakes, fruit, or yogurt (all things that are easy to carry on patrol).

    I have lost 20lbs since January 1st on this "diet."

    Good thinking on the thread, Nikon! Also if anybody has any recipes or suggestions for quick meals that work for one person since I'm usually eating in between classes and work, that would be appreciated.

    Little background here:
    I am working on getting weight down and everything for the police academy. Been working at this for over a year and have lost 95lbs and put on significant muscle gains. Couldn't jog for 2 minutes when started - now over 15 no problem - just gotta get faster. Been eating about 5x a day now, LOVE Special K cereal bars, protein shakes, fruits and peanuts (unsalted of course). Eat lots of chicken and some lean beef but my usual recipes for chicken are getting really old, really fast. I need some variety. Got a healthy slow cooker cookbook and that's been good but with the 7mo old it's hard to get everything together that far in advance.

    What are some "creative" ways to cook chicken or something that you've found that may be a bit "odd" sounding but is actually really good. I've been trying more fish but wifey HATES fish so that's tough.

    That's all for now - I'm going home. Someone has be a cook around here.:D

    I hear you about geting sick of chicken, I've been watching what I eat for a while and eat A LOT of chicken. One thing that I enjoy are gardenburgers. I know they sound bad, but they are low fat and low sodium and are easy to cook, not to mention they come in different flavors. (I like the garlic herb) If you can find a hot wing sauce that is fairly low on sodium. I like to put it on grilled chicken breasts, the spicier the better. I read that spicy food speed up your metabolism a little. I also eat a bowl of Special K for dinner at least 3 times a week.

    OK, this is absolutely stellar for boring ol' buzzard. I know it sounds weird but you try it and you'll be making it again.

    BBQ Peanut butter chicken.

    1/2 cup smooth natural peanut butter (don't use Skippy, Jif or any commercial brands. All the good fats have been replaced with hydrogenated oil) Most local markets have it, if not a food processor and unsalted roasted peanuts are all you need.

    2 tablespoons of soy sauce (can use low sodium if you like)
    2 tablespoons of white wine vinegar (don't use distilled white, it's too harsh)
    2 tablespoons of fresh lemon juice (don't use the bottled stuff, it's garbage)
    3 garlic cloves minced fine
    1/2 teaspoon red pepper flakes
    1 teaspoon fresh ginger finely chopped

    put all of the above in a blender and mix. If it's too thick you can thin it out with some water. Place chicken in a zip loc bag and pour marinade over, remove all the air from the bag and seal. Shake to be sure the marinade is evenly distributed. Refigerate for 2-3hrs.

    Cook on the grill being careful of the heat (PB will burn). Cook to an internal temp of 165f and eat.

    I have a few more I can post if your interested.

    Had it last night. Was pleasently surprised after the look of it in the bag :D
    I refused to tell the wife what it was until after she said if she liked it. I had to improv on it a bit due to lack of things I thought that I had but I would love to try what other ones you have.

    Nikon...do you like soup? A couple times a month I'll make a huge pot of vegetable soup that I'll eat for days...then freeze the rest. I use all kinds of vegetables in it....potatoes, carrots, celery, onions, garlic, zucchini, yellow squash, spinich, green beans, corn, peas, chopped tomatoes, cannellini (sp?) beans, chicken stock and a bunch of fresh cilantro. It is sooo good! I've also added chicken to the soup before and it was really good too.
    Feel safe at night...sleep with a cop.

    If you run, you only go to jail tired.

    You have some sort of recipe for that or is it just a learned thing? If you have one, that sounds like a good thing to cook up!

    No recipe...just start throwing stuff into a large stock pot. If I had to guess, I would say:

    1 large onion, diced
    3 large potatoes, diced
    3 carrots, chopped
    3 stalks of celery, chopped
    2 zucchini, chopped
    2 yellow squash, chopped
    3 cloves of garlic, minced
    1 small bag of frozen spinach
    1 can of green beans
    frozen peas and corn
    1 large can (28oz) of diced tomatoes, undrained
    1 can of Cannellini (sp?) beans, drained and rinsed
    1 bunch of fresh cilantro, chopped
    Pepper

    I use water and add several cubes of chicken bullion (sp?). If I have V-8 juice, I'll add some of that also. Just put everything together in a large stock pot...keep adding veggies until the pot is full, then cook on med-low heat for about 2 hours. It is sooo good!
    Feel safe at night...sleep with a cop.
