For a very healthy and lean meat try venison (deer meat), it has virtually no fat in it, if you dont like the "gamey" taste of it try soaking the meat in milk before you cook it and it will taste just like beef.

    3 stalks of celery, chopped
    2 zucchini, chopped
    2 yellow squash, chopped
    3 cloves of garlic, minced
1 small bag of frozen spinach
    1 can of green beans
    frozen peas and corn
1 large can (28oz) of diced tomatoes, undrained
1 can of Cannellini (sp?) beans, drained and rinsed
1 bunch of fresh cilantro, chopped
    Pepper

I use water and add several cubes of chicken bullion (sp?). If I have V-8 juice, I'll add some of that also. Just put everything together in a large stock pot...keep adding veggies until the pot is full, then cook on med-low heat for about 2 hours. It is sooo good!
I don't know that I have a pot big enough for all that food......But I think that I will try it anyway :D

I like a little venison but not too much. Never heard of that milk trick though. How long do you leave it in the milk? Just kinda dunk it in or for like 5 minutes or so?

Still waiting on Cruzmisl - I recommend trying the first (ahhem, and only) one that he's posted. It was very good.

OK, I'll go with a beef recipe this time.

Aside from what most people will tell you beef is actually good for you BUT it has to be grass fed beef or free range beef. The fat profile of grain fed beef is totally different from grass fed beef. Grass fed beef has less calories, less saturated fat and more omega 3 fats than it's mass produced counterpart. If you live in a relatively large metropolitan area you should be able to find it. If not, you can substitute buffalo or order it online. As strange as it sounds these burgers are amazing, I'm having them tonight.

    1lb extra lean ground beef.
1/2 cup or so of crumbled feta cheese
1/2 cup of kalamata olives pitted and chopped rough
2 or 3 cloves of chopped garlic
    salt and pepper to taste.

Mix it all in a bowl and form 2 large patties. Grill and enjoy. I'm sure you know how to cook a burger

    More to come.

    Chicken Recipes

    I have 2 ideas:

    1) You can make chicken kabobs. Dice boneless, skinless chicken into cubes, marinate in low sodium soy sauce with garlic, ginger and whatever else grabs you at the moment. Marinate for at least 2 hours. When the chicken is done marinating, alternate between the cubes and chunked pineapple. Grill and serve with a side of brown rice and mixed veggies.

    2) Stuffed Chicken Breasts:

    1 leek
2-3 cloves of garlic, minced (add or subtract to your liking)
    fresh sliced mushrooms
    basil
    italian seasoning
    oregano
    1 of fresh diced tomatoes (usally seasoned w/basil- I think it's Hunt's)
    boneless, skinless chicken breasts, thawed

Heat up a pan, throw some oil in it. Mix all veggies together EXCEPT tomatoes. You want to sautee your other veggies first. Once sauteed, throw in the tomatoes. Let the mixture warm up.

In a glass dish, open up your chicken breasts and pour your veggies in. The mixture shouldn't be soupy. My mom can usually fit about 3-4 breasts in the pan. All your left over stuffing goes around and on the chicken. Cover the pan w/foil, bake at 350 degrees for about 40 mins. You can eat these by themselves or with a side of pasta or rice.
People think your dangerous when your chaotic, however I feel much more dangerous now that I'm focused.

This is one Imake on the weekend and have it for lunch all week. It's good hot or cold. Instead of noodles, I use a spaghetti squash, but I have tried it with whole wheat noodles before and it's still pretty good :D

    Spaghetti Squash Chicken Alfredo,

4 boneless chicken breasts cut into bite size pieces
    4 T I Can't Believe It's Not Butter
1 med spaghetti squash, cooked by your favorite method and separated into strands
    1/2 C lowfat or fat-free sour cream
    1/2 C shredded Parmesan cheese
1 C low fat shredded mozzarella cheese
    3 cloves garlic (minced)
    1 medium onion (chopped)

    Serves 4

Sauté chicken, onion and garlic in butter until cooked, about 10 minutes. Heat sour cream on the stove and when it is very warm, add the cheese and stir to melt. Combine the cheese sauce with the cooked pieces of chicken and the cooked spaghetti squash strands. Sprinkle with extra parmesan cheese if desired.

I'd highly suggest this book if you're looking for some good, healthy recipes. All recipes contain nutritional information, and you can obvioulsy vary things such as the salt content for your specific needs. It's one of the best healthy cooking cookbooks that I've seen.

I have a couple ''wierd'' sounding recipes, that taste so FANTASTIC!! I was on weight watchers after I had my daughter to lose all the weight and had some great recipe ideas. Even now that I am off, I still eat these... and am planning on starting back on weight watchers again.

The first one is Diet Coke Chicken. You can put ingredients in a crock pot or in one of those glass pans in the oven for about an hour or until done.
take 3 (or desired amount) of boneless skinless chicken breasts
mix one can of diet coke and 12 oz of BBQ sauce
    pour over chicken and cook.
I also make rice to go with it, and it tastes so awesome! It is one of my favorite recipes!

Another is Diet Coke Chocolate Cake.... I know this one sounds really gross, and when my friend first made it, I really didn't want to try it. But it is really awesome.

1 pk of Devils Chocolate Cake mix
    1 diet coke
    and 1 egg

use a diet sprite for light colored cakes.

    cook as directed....

I cook this in a bundt pan, cut into small pieces, and for frosting I use 2 TBLS of fat free cool whip when serving. THE BEST CAKE EVER!!!

Hope you guys at least try these!
