First, welcome to RP. I am sure you will love it here!
Now, there is plenty of opportunity for teaching in LE. First, and I think most importantly, being an FTO is one of the best spots to really pass on knowledge in the LE field. Granted, it will take some time to get an FTO position, but they are there.
Then, there are opportunitites to be an instructor in just about every tool/specialty that the agency has. I am a certified instructor for weapons the USMS doesn't even issue!
The have sent me to many instructor schools and I get ample opportunity to teach... whether it be a little help in firearms to people in my district or a full lown swat school for another agency, opportunities are there.
Finally, one can try to get in a slot as an instructor in the academy if that were a career goal.
