I know I want to be a cop, but I also would really like to join the FBI. Does going to a career center for law enforcement effect chances of getting a job? (still a sophmore in high school)

What is a "career center"?

Peace is not the absence of conflict, but the presence of justice.
My new hero!
If I'm understanding the same kind of career center, some high schools allow you to attend a vocational related school during your junior and senior years.
I don't think it would help or hurt. Most of the time your home high school is the school that issues the diploma depending on the setup, so they may not know you even attended one. Regardless, at this stage they would be more concerned that you had a high school diploma and not be too worried about which school you attended.
Pay more attention to your grades, personal conduct and your studies on college as you'll need at least a four year degree and a bag full of luck to get into the FBI.
