Even after all the comments you continue to minimize your actions, you stole money from your employer. Others have stated they would not hire you, I concur.

Ecclesiastes 8:11...
Because sentence against an evil work is not executed speedily, therefore the heart of the sons of men is fully set in them to do evil.
ok, well now you guys clarified what to say on the polygraph, thank you, but I will continue on and at least try it.
just a question or two more; since I stole from my previous employers, would you say I will always be DQ, no matter what? Just change my degree back to engineering, Or can I wait a few years and prove that I have changed and will never touch what is mine never again?
I was thinking of joining the military if all else fails and maybe learn a lot throughout the job.
Any advice?
Time is your friend.
Show that you've changed, put time between you and your past, and younwill be in much better shape in a few years. The military would be a good way to spend that time, among others.
Also, consider how good it would look to come forward on your own, admit what you did, pay back what you owe, and accept the consequences of your actions.
I would not say this is permanent or cannot be overcome, but face it head on (without trying to minimize) and give it a few years.

Again not a LEO but the general (and blatantly obvious) advice on this site about degrees is that CJ is not the best degree for LEO work. In fact it is mostly encouraged to get a degree in something else, just to have a back up plan in case LEO work doesn't work out for you, or you are ineligible for LEO work to begin with.
The PD won't care what your degree is in (or even if you have a 4 year degree, this I know from personal experience as I am moving forward in the hiring process with a 2 year degree) as long as you meet their college hours requirements and/or their military requirements.
