I don't suspect you're going to be commuting back and forth between New York and Texas on a weekly basis, so you're going to be taking up residence in New York, even if it is temporary.
If you're looking for the definition of 'residence', you'll find several, all depending on the context. The easiest to apply is asking where your mail goes. If your bills and other mail get delivered to your New York address, you've taken up residency and the New York rules on registration and driver's licensing apply.
I don't live in New York, but in my state, a new resident has 30 days from the date of occupancy to obtain current registration and valid licenses. I'm sure New York has a similar law, but the time limit may be different.
My state allows you to dwell in two or more states BUT you must declare residency in one of them. You would be OK with your TX tags in PA as long as you were a full time student.

As long as you are a registered student you will be fine in NY. After you graduate you have 30 days to get NY plates/inspection/registration/drivers license.

That's very true. When I got out of the Army and was looking for a job, I was having trouble getting past the interview.
In the words of a Don Williams song, "I learned to talk like the man on the 6 o'clock news" and bingo! I started getting job offers. The only time my accent comes out now is when I'm talking to someone from Texas, then I sound like I'm standing out in the middle of a cotton field!
Creeker is absolutely correct. People from other parts of the country tend to equate on some level, a Southern accent or Texas draw with being stupid.
It was kind of funny when I worked the Black area of Portland in the early 70's. I had pretty much dropped the accent, but a lot of the older Black people here came up from Texas during WWII to work in Kaiser's shipyard. I'd start talking to them and I couldn't help reverting back! I got some strange looks from partners now and then.
