I'm answering before reading any answers:
1) No deadly force here, at all. It's an assault by bodily substance or whatever your jusrisdiction calls it. The only thing that gets hurt is your pride. I'd consider it more of a signal of his intent to commit further assault/physical resistance and transition up to OC/ASP and roll backup (unless I see a weapon from him, then we transition up from there).
2) Two people attacking me is deadly force. My weapon is drawn and if they continue to advance within lunging distance of me while my weapon is drawn, and ignoring my warnings that they are gonna get shot, then I'll consider it to be an attempt to take the weapon from me and someone's gonna get plugged. Roll backup NOW and try to stay out of their fighting range until it arrives.
If they try to take up positions either side of me, then they get less lunging range.
