I was born in Hong Kong and I currently have a green card for the United States. If I gain citizenship from marrying my fiance, who is a United States citizen, would it allow me to become a police officer?

You need to do some more research. Marrying a US citizen does not de facto make you a citizen. The only thing marriage to a US citizen does is allow you to immediately file for permanent residency, and the two (permanent resident vs. being a citizen) are two vastly different things.
In 99.99% of all police jobs the very first requirement is to be a US citizen, since you must swear to uphold the Constitution as a part of the job.
