On the applications I have filled out, there was always a question at some point of: "how much alcohol do you consume per day/week." Bartending may not in and of itself be a hang-up, but consuming alcohol like you do will more than likely cause serious concerns to be raised on a pre-employment screener.
As for the job, it sounds like you are working in a Coyote Ugly style establishment that likes you to drink with the customers, and it's frowned upon if you don't. If that is the case I would say you probably have two options:
1) Cut down the booze by pouring yourself a non-alcoholic drink "look-alike" to do shots with, instead of drinking the real thing.
If for some reason that's not an option, then...
2) Find a job that doesn't "require" you to drink on the job.
*In addition, also realize that if you pass the pre-employment screener - most agencies will then follow-up with a polygraph with one of the questions being... "were you truthful or X form/question/etc." or some derivative of that. So simply saying, that you drink less than you do would not work unless it is the truth.
