just curious what "could happen?"

I got to the bar/club with my friends and allow myself my one beer when i first get there.(1200 am) then as (2am) roles around and the bar is closing we leave and I am the driver. In my own car. I start on my ride home and get lit up for not using my turn signal. The officer approaches and asks for the usual, but then asks me if i was drinking. Granted he would need probable cause to ask me if i was drinking, but is 2am and a i am 21 enough probable cause for him to ask? I say yes i had one beer earlier in the night. what "could" happen from here....?

Depends on the size of the ONE beer. One can or mug sized beer shouldn't affect or impair your driving much. The fact that 2 hours has passed will help. Before you get in the car.....ask yourself:

Am I impaired? Can I get home? When in doubt call a cab.

What could happen from here...................you say yes, you had one beer. He pulls you out and gives you some tests. Maybe gives you a PBT. If the officer feels you are impaired you will be arrested and fall under any penalties. If not then your on your way home.

Suggestion: Start using your turn signal. :D

You are terribly misinformed. PC is needed for arrests and/or some searches. LE can ask you anything, at anytime prior to an arrest.

If answered, and you had been consuming, you may be asked or directed to perform sobriety testing. Certain tests can have your privilege to drive revoked.... if you so choose to refuse.

Though, even had you stated that you had not been drinking, and the Officer believes that you had been, you would still be subject to sobriety testing.

We don't typically ask if you are drinking because I can usually smell it anyway. We are more askling to see if you will try to lie about it, an indicator that maybe you had more than a shot glass of beer ??

Where did you ever get the idea that an officer needs probable cause to ask you if you've been drinking? That's not true.
