She is 18, if her parents try to send her back to Poland she doesn't have to go because she is a legal adult capable of making her own decisions. Also, if you two get a place together, her parents can't do any "legal" action against her.
They can't get a restraining order without good reason. They have to show proof of why they need one, and them saying "I don't like my daughters boyfriend" won't cut it.

Depends on where they are, around here you can get a restraining order for anyone if you want to shell out the money for it.
And if he is someone they do not like and do not have to contact with then yes they certainly could get a restraining order out on him.

Keep in mind her permission to be in this country at this time is based solely on her parents....if you sever her contact with them, such as in moving in with her without marriage, she could be deported.

Oh I need to add:
She is not a US citizen and does not have the same rights as you do.

A method I use to determine if someone is too young or too old for me is as follows:

Too Young:
(Your Age)/2+7
For me it is 19/2+7=16.5 I won't date anyone younger than 16.5 years old.

For me it is 19*2-12=26. I won't date anyone older that 26 years old.

This is just a method I came up with for myself. I have found that it works good FOR ME!

I'm 26, so my range is 20-40? lol. I think 40 is a little old for me...

That formula doesn't work for me.
I've always liked older guys so even if 18.5 is the youngest I would go, nah, ain't gonna happen. lol.
I was also 22 and was involved with someone who was 40 for a short bit.
Didn't bother me or him either.
So you know, it's all to each his or her own.

Anyways, there's not much her parents could do. They COULD call immigration on her but really, if they do that, wouldn't immigration realize they didn't have their green cards either and weren't citizens?
But as some people already said in here, it is a civil matter and you need to get yourself a lawyer.

Please tell me you're just kidding? She does not need her parents permission to be in the U.S., her parents have nothing to do with her status here. And as far as being deported, unless she commits a crime it is VERY unlikely that she would get the boot...

PS: she most certainly does have the same rights as you (with the exception of a few, like the right to vote). The great thing about our country is that we don't have seperate sets of rights for different people...
