You are likely thinking of Super Bowl XXVII - Leon Lett of the Cowboys picks up a fumble and runs it toward the end zone. Don Beebe of the Bills chases him down and knocks it out of Lett's hands as Lett is showboating at the one yard line. Lett is a doofus.

What would have made this even better was if the Cowboys secondary picked up the ball and strolled down the field and scored.

Of course the NFL rulebook and blowing the play dead might over rule the TD but it would make Jackson look like an even bigger idiot!
